Thats pretty much the method that I use. But I'm nowhere near that fast at it. I do it in the field and don't even bother bringing whole carcasses out anymore.

Heckuva sharp knife, and the guy has obviously done it a million times. The only thing I see that is disconcerting is him cutting through joints. With animals in a CWD area, that is incredibly risky!
