I started making these a few years ago 'cause it seemed when I was doing a Tri-Tip or brisket there'd always be people hangin' around wanting a taste. You'll need pitted dates, thick cut bacon, water soaked tooth picks, mesquite bbq rub. Lay the bacon open and cut the stack of slices in half. Take half the stack and seperate the pieces. Sprinkle the rub on the bacon, wrap the bacon around the date (rub toward the date), pin it with a wet toothpick. Throw them on the grill. The first batch will go a little at a time until people try them. This gives you a chance to get the next batch ready. The salty bacon contrasts the sweet of the date, and the smokey mesquite flavor just melds it all together. Nate | ||
