Got any goose sausage recipes?

Had a real good season on snow geese and looking for some new uses of all the meat. Wanting to make some goose sausage...anyone have some particularly good recipes that are very, very mild (wife can't eat anything spicey).

I don't have any sausage recipes that are specifically for goose, so I wouldn't have any idea as to the ratios of pork - if any - that would be needed. Hopefully, someone with a little more experience can come along and throw out some ideas.

One thing I do know is that goose breast can be cured and smoked into some excellent proscuitto, pastrama (not pastrami), and (now that I think of it) also pastrami, as well as other similar charcuterie. It is extremely easy and I am guessing the results would be only slightly short of heavenly.

I've never tried it with goose, but I have with other meats, and the transition should be quite easy as there is no potential mixing of meats involved. If you'd be interested in persuing something along these lines, I might have some resources available.

I made sausage from goose meat before and it stunk so bad I couldn't even be bothered to cook it.

Instead, look for recipes for goose breast pate. You could probably use it for other cuts, too. I'm waiting for a friend to bring me some goose breast and I'm going to try it for an upcoming get-together. I've had it before and it's really nice.

Buddy always brings a prepared goose breast to fishing camp. A girlfriend of his does it and it's kinda like a carpaccio but more well done, with the center just pink. Unfortunately, I've never got the recipe. It's great sliced thin then served on crustini's with either Dijon mustard or olive tapenade.

If all else fails, there are also recipes for goose jerky. Sliced thin enough it's probably edible.

Thanks guys. I really like goose meat and have several recipes for it. My wife's favorite is a goose stew I make. I'm going to try and adapt some sausage recipes to try to make use of some of the goose meat I have.

I like salt pepper and sage, garlic red pepper ans a little anis.

roasted goose is like roast beef to me. makes a good sandwich.
