I just picked up an Excalibur food dehydrator and made my first batch of antelope jerky. I highly recommend the Excalibur. I overdried the first batch. Resoaked it and redried. Perfect the second time!! I see a lot of jerky in my cooking future. Kids love it and everyone, even the "I don't like wild game" crowd will try some.

I have a Nesco American Harvest dehydrator works fine and it costed me a round $40.00 it takes me a bount 3 houres to make a batch useing ground meat. [Wink]
