3 lbs.hog stew meat
1 onion chopped
crushed garlic to taste
4 poblano peppers charred,cleaned & chopped
1 pkg taco seasoning
1 can black beans
1 can mexi-corn
1 can rotel
2 lbs spuds in large chunks
1 bunch cilantro washed & chopped
red wine
Carmalize onions set aside.Brown stew meat deglaze pan with wine.Add everything except cilantro back into pan.Add enough water to cover.Simmer untill meat is tender,thicken with corn starch slurry if desired.Add chopped cilantro just before serving.
