long ago thee was a very good restaurant which we often went to. they had a hot vinegar bacon salad dressing that was exceptional. i just found the receipe for it and i think you will really like the results. makes about 1 cup 5 pieces of bacon cut into 1/2" pieces 5 tbsp - extra virgin olive oil 1/4 cup balsamic vinegar 3 Tbsp minced shallot 3 garlic cloves minced 1 Tfsp light brown sugar pinch of salt & pepper cook the bacon in a skillet until crisp transfer the bacon to a paper towel and drain off all but about 3 Tbsp of the drippings wisk the oil into the skillet mix the vinegar, shallot, garlic and brown sugar in a small bowl, then add to the skillet, add the bacon bits and stir over a low heat. serve warm over cold lettuce | ||
