Stuffed jalapenos

Wear rubber gloves...otherwise you won't be able to touch anything of a private nature.

1. Couple dozen fresh Jalapenos
Cut them in half length wise, take the seeds and junk out of the middle.

2. A few packages of cream cheese
3. Enough bacon (cut the pieces in half)

Stuff the jalapenos with cream cheese, wrap them with bacon and pin with a toothpick

Bake on a wire rack (gotta have a drip pan underneath) until the bacon is done.

Try putting some wild duck, turkey or dove breast in between...uuummmmm good.

Do you turn them? Does the cheese try to drip out? Are you stuffing halfs or whole peppers?

Here's what you need for your stuffed jalapenos. We call 'em ABT's "Atomic Buffalo Turds". There great, we stuff 'em with shrimp and cheese, topped with a piece of bacon. Just be sure when core 'em to get all the seeds out. Depending on your taste you can try habaneros instead. We went through a case of beer after a half a dozen of those. cheers

Cut the top off of the jalapenos and then with a small knife, cut out the seeds. You are making a sort of cup out of the jalapeno. Get Italian sausage (pan style, not links) and lightly brown in a skillet. Mix the cooked sausage with cream cheese, 50\50 mixture and stuff in the pepper. Cover the top of the pepper with bacon using a tooth pick and smoke at 225 degrees for about 90 minutes. We can never cook enough of them as everyone wants some.
