Cooked one leg of my "stud" wild turkey for 24 hrs in crockpot...before I threw it away. Faced with the need to do something with the rest I tried a recipe my daughter provided. 1 10 oz package chopped frozen spinach, thawed, and water pressed out 1 lb ground turkey, I used white meat 1 egg 1 cup bread crumbs 1 cup grated Parmesan cheese 2/3 cup shredded mozerella cheese 1 large clove garlic minced or put through press 1 t salt 1 T Italian spices 1 T parsley flakes Blk pepper to taste Combine above well, form into balls slightly smaller than golf ball (makes about 30). 1. Peheat oven to 350 2. Using large oven proof skillet, brown balls in some olive oil. (Do 1/2 at time to avoid crowding). 3. Once browned, move pan to oven and bake uncovered for 20 min or so. Serve with your favorite sauce, I used a vadka flavored speghetti sauce. Served with pasta, fresh green beans, vine ripened tomatoes and dilled cukes. The rest of the turkey was made into jerky: 1 batch each of High Mountain Cajon, black pepper and hickory. Great all around. 3. | ||
