cheese - got swiss, blue, gongenzola, gouda , gouda with chipoltes - yup gouda with chipoltes
maybe wrap a piece or 3 of bacon around it - yup
throw in in the big green egg with a bit of apple wood - yup
finish it with some shitake mushrooms in gravy - ok
