The last batch of sausage I had smoked at the local butcher was gamey as hell so here's what saved it. But first....To make it (and you can use regular smoked pork sausage which we use most of the time and it is great) I sauté 1 inch slices of sausage in olive oil and then throw in a handful of finely chopped onions and celery hearts along with some garlic powder, sea salt and pepper and cook until the onions are wilted. Throw everything into the crock pot along with some cubed peeled potatoes and a good bit of dried parsley and a bay leaf or two. Barely cover with water and cook on low for about 8 hours. Check for salt and pepper taste. To get rid of the gamey taste If you use strong venison sausage), add a cup or so chicken stock and 2 tablespoons of blackberry preserves. Life itself is a gift.
