I've got a new plan for some of the next wild hog I bring down. After my most recent hunt, a friend told me about Kuby's. He said just take the meat in, and tell them what you want, and it's a done-deal. He said some of the sausage will just absolutely knock your socks off. I'll have to let Gato and his wife try some and see what they think.

I really like Kuby's store (not processing plant) and they have some great mostly European style sausages. I find their American efforts, jalapeno mixes, etc to be pretty bland, but I like it hot.

We are always ready to try free sausage, but Randy makes some exceptional breakfast/burger style pig sausage for his friends......which might include you, maybe.

If you get over this way again, on 82, stop by Detroit Processing Plant Store. They have a large selection of deer/buffalo, whatever sausages, wurst, etc and they are damn good. Not cheap, but good. Like me. Smiler

Ps: looking at Kuby's processing prices, you might as well just buy the meats in their store. Obviously for rich Dallasites.

Detroit Pro. Plant also does pigs, etc and is somewhat more reasonable. You could set up a cycle. Shoot one or two, have them process them, come back, shoot one or two, pick up processed pig, have them process next victims, etc.

Of course, the "shoot one or two" is the toughest part, especially for some people..... Wink

PPS: As I've mentioned before, from now until about end of April is best time of year for killing pigs. However, the damn weather is so spring-like already, and getting warmer, that it may shorten the normal cycle. I'm sure you know this but we just had the warmest February EVER. Not to mention, we're turning cattle in, so feeders will probably not be used. Check your schedule. Big Grin

Once it gets hot, the pig hunting in daytime is pretty much over with.

In a perfect world, I would only have to wing'em, and they would then skin themselves before they flopped over dead. I can see a lot of hard work and dull knives ahead of me.

Kuby's has processed a lot of game for me over the years and I have always been pleased. Unfortunately, they no longer smoke hams or make tamales.

I plan to take a frozen front shoulder to Kuby's tomorrow and see how it turns out. My priority is going to be their Smoked Links; Chipotle Jack and Jalapeno Cheese. I might also try some fresh Link, Spicy Italian.

I would have posted this information sooner, but I was still pouting over the "not a terribly bad shot" comment Gato made. I'm about over it; not quite, but almost.

I'm not even going to tell him that I won the monthly shooting trophy at the Frisco Gun Club, outgunning 21 competitors in our retirees group. Yes, they were from the Frisco School For The Blind, but at least two of them could see; I know for a fact. Those two didn't miss their mouth with any of the beer we shared afterwards at lunch.

I used my 9mm and shot a 252 out of 250, with one handicap shot. I'll lose that extra shot next month. I'm just trying to imply that my eyesight is getting better.

I let the man that shot 249 out of 250 with no handicap shot hold the trophy for a minute or two.

Incredible, 252/250 at a range of 3 feet. Lucky they used fireproof targets. Smiler Next time, take a bowie knife.

To repeat, no kidding, IMO you'll be better off to just go to Kuby's store and buy your choices. Even if you love the results, you aren't going to get enough eating out of processing one shoulder to make it worth the effort. Perhaps you should try to kill another pig, they die of old age everyday, maybe you'll get lucky. Big Grin

You are exactly right about the shoulder. It weighed seven pounds bone-in. They think they are going to get about three pounds (two logs) of a Jalapeno / Cheddar Salami out of it. That is about all I wanted this test to cover.

If it tastes good I may have them do multiple shoulders next time. I like smoking the hams myself. I think the bottom line is that fewer of my friends are going to get to share my good fortune.

The Bowie knife may come in handy when I go to pick up the meat. The guy working at Kuby's told me not to stop at the nearby Chevron station. Said a homeless guy tried to jack him about a month ago. The guy pulled a knife. Like Crocodile Dundee, the Kuby guy pulled a bigger knife.
