Slow cooker wild boar

Got this off the internet some time about a year ago, and my wife finally made it. Absolutely the best boar recipe we have ever tried. Credit is due to Chef Dennis Littley, this is apparently his recipe. Thank you Dennis!
Ingredients: 5-6# boar roast, olive oil to coat roasts, 2T Montreal Steak Seasoning, 1 onion with skin on chopped, 2 carrots rough cut, 1 bunch parsley chopped, 6 cloves garlic, 1 small can diced tomatoes with juice, 1/2C bourbon, 1/2C brown sugar. We omitted the garlic, but all else was the same. Instructions: cut roast into manageable pieces, rub with olive oil and season liberally, set aside, chop veggies for slow cooker, heat large saute pan on stove top and when pan is very hot add a little olive oil and sear both sides of the roast pieces, put veggies and garlic in the bottom of slow cooker, add roast, bourbon, brown sugar and diced tomatoes, cover and cook on low for 7 hours. The sauce in the bottom of the slow cooker should be strained and placed in a small sauce pot, reducing the liquid by half over a med-high heat. Serve the boar meat in small pieces, dipping it into the sauce. Again, we deviated slightly by first making a pot of egg noodles, and then by removing the meat and then pouring everything else in a pan on medium high heat. While stirring about 2T of corn starch and 1/2C cold water were added. When it was thickened as we liked, we put it back in the slow cooker and added the meat. Next we spooned the meat and veggies over cooked noodles and topped it with the sauce. Tonight's leftovers were just as good as yesterday's first-run! Try it, you won't be disappointed. Put your knives away, you won't need them.

We have just one more boar roast left from last year's hunt. After we polish that off the same way, we're going to try it with a regular pork roast, but I bet it won't be as good. Guys, this is some fine eating!
