I am looking for a recipe for wild turkey legs.
Tinking about a brine and wrap with bacon, maybe.

That right there sounds like a good plan to me; I've smoked turkey, but never turkey legs by themselves. Your plan would be the first one that I'd try.

PS - I've found that cherry woodsmoke and turkey go great together; but of course, any fruit or nut wood can be used with great results, along with the other usual options. If you decide to go with mesquite, be careful with it - it is wonderful stuff, but can over-power if used too much.

I smoked mine over apple and THEN put them in the crockpot. Ridiculously good. Tender and tasty. Kid couldn’t stop eating them.

Baxter do you put anything with them in the crock?
one thing I thought might be good is throw one in a pot of great northern beans with some chicken stock carrots and celery. make a turkey bean soup
