I've always enjoyed making sausage. Here's a link to a brand that I use from time to time. It's pretty good. I do preferr fresh casing when and where I can get it though. www.dewied.com/

Jim, here in Michigan we have 3 makers that are all pretty good. Kowalski Sausage Co., Deaarborn Sausage Co., and Kogel's, located near Flint. Kowalki and Dearborn also make good kielbasa, and myself, I prefer the Dearborn brand. All available via the internet.

Easiest thing you'll find around Searcy is probably Hebrew Nation kosher hot dogs or Vienna brand kosher dogs. I'm sure a grocer can order them for you if they aren't stocked somewhere. Not as good as homemade but light years ahead of Ball Park their ilk. Or find the local Synagogue and ask the Rabbi where is the closest kosher butcher. "Experience" is the only class you take where the exam comes before the lesson.

For the best check out the link below. IMO Much better than any of the brands mentioned. Of course I was born in Flint, MI. http://www.koegelmeats.com/
