there is one design limitation with the rolling blocks, the flip back breech block. It can limit the oal on longer cartridges. I had a friend determined to chamber one in 45-120...not nearly enough clearance to get the loaded round into the chamber. My suggestion: buy a Uberti from Cimarron Arms in 30-40 Krag. There are two versions, get the deluxe, pistol grip, double set triggers, and checkering. You can get a 40 caliber (make sure you specify .408" or .410" bore, based on the dies you get, there are at least two versions) barrel from Badger tapered octagon to match. IS, boy if that ain't the truth,,have a barreled action {No-1} that some one did in 45-120, and then grooved the hammer nose so the round would slid in,, It and another No-1 some one tried to make into a cheap buff gun just set around waiting for me to make up my mind on what to do with them now. You probably already know this but the .40-90 Sharps straight - ain't. A Sharps that is. They never made 3.25" cases in any caliber. Be that as it may, the rolling block will require nose modification to the hammer as pointed out. A good falling block action like a Winchester would be ideal for a cartridge like this. There are many modern makers of Winchester actions and completely rifles. You could buy a Uberti in .45-70 and ream it to 120, or any of a dozen other paths to that point. It's not to hard to turn up a 74 Sharps from Shiloh in that caliber and some Pedersolis as well. Both are excellent rifles.
