Keeping the color ?

I would like to make a set of grips for a Ruger Blackhawlk

Not that hard
But I want to use Mullberry for the wood
I love the color of the heart wood

But after I cut it
It turns all brown

How is the best way of saving the original colors , as it was when I first cut it ?

Hi--I did a couple of pistol stocks--i shaped
then sanded and put on a coat of oil
and they were back to the color i wanted
the oil brought back the color

As I have been off work for about 1.5 years from a fall
