I am kicking around the idea of building on of these. Is it possible and safe to rechamber a 6.5x55 or would it be better to start from scratch. Please excuse my ignorance on this as I am in an information collection stage right now. Any comments welcome and apprecaited.

You can do it if you cut a few more threads (like 3) on your barrel and set it back. You need to loose .006" of taper and that is one sixth of the total taper of the old cartridge.
you will likely have more problems with the pressure levels that can generate in the O6 case. Will have to ask some of the swede pros on that.

It can be done and works fine. As mentioned, remove threads from the barrel to remove taper and rechamber. The magazine box will have to be lengthened, same as any Mauser action, for full length -06 loads. As long as your handloads don't exceed factory pressures you'll be fine. After all, Kimber chambered and sold 96 actions in 22-250 and 308, both of which run at higher pressures than the standard -06. I have one and it is a great rifle. - Dan
