I bought a 721 action, used for a 30-06 barrel. I want to buy a 257 Roberts barrel (found one) to use instead, but am concerned that the extractor will not "grab" the Roberts head. Any advice would be greatly appreciated.

The 257 has the same head size as the 30-06. I see no problem using it in that action.

A 257 roberts should work great in a 721 originally a 30-06 both have a .473 head diameter. Should be a simple rebarrel.

The "cheat" here is to grab a cataloge with shell holders. Anything that fits into a shell holder for the '06 should fit into a bolt face too. .308 has a slightly thicker rim, usually no matter. '06 was patterned after the Mausers, 7x57, 8x57 and all have .473 rim diameter. .257 was necked down on the 7x57... enjoy, luck. Great round if a bit old.

One thing you might want to consider is that extractors for the 721-722 are impossible to find. Occasionally a customer will bring a new one for me to install, but I've never found a source for them. No current Remington extractor will work.

I'm not trying to rain or your parade. I just figure you might want to find a spare before you get to much tied up in the project.

Your 721 is one of the best production turn bolt rifles ever made. Go for it!
As Mark pointed out, 721/722 extractors are no longer produced, however, Sako type extractors are the fix and that ends the problem should it ever arise.
I've owned several early Remingtons and have only seen one that needed a new extractor, it was a .222 Remington that had a ton of rounds through it.

I've been collecting Rem 722's and have seven of them so far. I see extractors for sale on GunBroker.com pretty regularly, if you ever need one. They ain't cheap, but they are there on GB.
Sometime I'll do a write up on 722 accuracy; it's beyond amazing. Here I've been mind set that barrels got to be free floated, actions glass bedded in stocks, etc. Well, 722's sure cured me of those notions. All except one, a 308, shoot far better than most factory rifles made today. Have targets, will prove.. The only ones I won't beat are Tikka's, and Savages, out of the box. But, the 722's will hold their own, rear sight blob on the barrel and all, with any factory rifle made.
This target is from the first 722 I bought, right here on AR Classifieds from Alan Glore. This group I shot was my mind set changer, and the rest followed suit, especially the 222's, 222 Mags, and 257 that shoot groups just like this.

Just goes to show you that if you load it to low pressure and only the FANS decide they want one it is almost forgotten. Loaded to the same pressure it gives up almost nothing to the 25-06.
