I have a 308 Pro hunter barrel and would like to have it rechambered to 300 H&H.

I don't see why not other than if the scope mounting holes are drilled over the chamber and are drilled too deep to make it safe when rechambered for the larger round. I seem to remember that when Ross Seyfreid rechambered a Ruger No. 1 in 458 WM to 470 NE, that when other people tried it, some of the Ruger's rib mounting pin holes were too deep to safely rechamber.

Yes they can as long as it cleans up the old chamber. I have has several rechambered and have done a few myself.Just make sure it is a safe chambering for the Encore.
