Stainless steel actions have a significant advantage over chrome moly steel in corrosion resistance. I prefer them for hunting rifles. The big disadvantage appears to be galling between the bolt and receiver. Could this be solved by coating the bolt so you don't have stainless steel on stainless steel ? If so which coating would be best for this purpose ?

Early stainless steel guns sometimes had the problem of galling but that's changed. They've got different alloys now. In any case there are lubes designed for stainless steel and high pressure applications [hinge pins] such as RIG +P.

eddieharrenOn most SS actions the bolt body is not SS. Only the handle and cockingpiece are SS.

butchlocthe secret for gallling on SS actions is to use a synthetic lube like break free or moly. conventional lubes won't work

Glen71Not liking the "stickiness" of a SS bolt action, a friend had the bolt body coated with electroless nickel and teflon (don't remeber the name). It slicked it right up. Sliding stainless on stainless is generally not a good thing.
