Your choice of scope eye relief and mounting height will of course affect your body's accommodation to a lesser or greater degree. Some choices simply won't work for some folks. There is also the consideration of being able to use the iron sights effectively when the scope is removed. Not planning on removing the scope? Now let me see, what's that oldie-but-still-goodie truism again? Oh yeah... You'll be s-o-r-r-y-y-y-y-y! Obviously if you have a scope or have iron sights, it has to be different. But I said scope I have a Mauser that I use iron sights on and the stock has lots of drop at the heel - it's perfect. I suspect the right drop for me, with a scope, is somewhere between 0" and 1/2". I need to measure some rifles I have. I did a stock for my father-in-laws scoped 7mm Mag and it has no drop on it. We have very different builds - LOP, face size, etc, but it fits us both perfectly.
