Is your frame and slide an original Colt? That is the basis of your 1911.
Careful on 1911 smiths, there are some very knowledgable smiths that specialise in them (small percentage), run of the mill smiths that do basic stuff, and complete idiots ( which unfortunately are in the majority ). I am very fussy on my 1911's, I have lost count on how many Colt 1911's I have but a dozen or better is a fair guess, a couple of which I have built myself.
In the first group are Ted Yost, Ned Christiansen, Bill Adair, and Dane Burns are all qualified 1911 smiths. They are top quality smiths, but time and/or cost will figure into selecting any of these. Adair does great work, he restored my 1914, and it is flawless, but he is picky and if it was made after WWII he won't touch it. Yost is does fanstatic work, he finished up my Delta earlier this year and he is a master 1911 smith, in my opinion and others he is one of the premier 1911 smiths in the country. Ned Christiansen does stuff with metal you need to see to believe he is a true artist. I don't own any Burns pistols, but have seen the pudding so to speak, he is defiantely a top drawer 1911 smith. Another couple of names you can trust in this game are Clark, and Kings.
If you look over at the Highroad, I used to run across one of the members there call "Tuner" out of the Carolinia's somewhere he isn't a smith per say, but he knows more about 1911's than 90% of the gunsmiths out there. He will (or did) take on projects ocassionally.
I assume you have an original Colt frame and slide. Many of your collected parts are in likelyhood just as ShopcartRacing said. Expect to replace the springs, your bushing as 99% of all originals are is just scrap metal, and once a barrel has been fit odds are its not cost effective to try and salvage it.
A good source for 1911 parts is Cylinder and Slide. Kart makes prefit barrels, so does Barsto.
