Swapped for a minty 444S micro-groove, and won't have time to wait for dies in the mail before deer season opens. Can I get by in a pinch with .44 Magnum dies?

I don't see why not. You would be partially sizing the cases which is OK. For many of the operations you could devise some kind of a stop so 444 dimensions would be achieved.

Why not just use the Hornady factory load this year and then re-load for next year with the proper dies?

Hornady makes some real good ammo, just a thought....
