Dates can be moved a little bit but the full rut rut is during those dates.
The hunt is for 7 hunting days and 8 nights, including one red stag regardless of size.

How large of a stag could someone expect, and what other game is available ?

Sir,
We expect stags around 8 kilos but bigger are certainly possible. The other games are brown bear, wolves and wild boars per the price list. I almost forgot we refund 1500 euro in case the hunter don"t shoot the stag.
