The meat is good, at least it was on the first Nilgai I shot on the same ranch a few years ago.
These two should be tender as they were less than two years old.

I expect to be eating a lot of it soon and for a while; we buy very little beef in our household and eat mostly wild game. On most game animals, we grind all but the best cuts and use that for everything from hamburger to spaghetti and meat sauce.
