We Tejano's call it menudo; a soup made of tripe, chilis,etc. that is guaranteed to cure a hangover, REALLY!, plus it works. FWIW, if you want the best quality menudo, don't go to a restaurant, go to the roadside cafes, gas station set up, etc. I.E low ball. Those old ladies make the best + real menudo. Some folks might not like the idea of "slumming" but although Im as white as rice I grew up in this Tejano atmosphere. TRY MENUDO!
