It depends on what you want to hunt for and what type of hunting you like. You'll have to be more specific.

If you have local friends who can take you hunting locally, you have heaps of choice.

North island has great Sika deer & red deer hunting in free range public land as well as private stations. Plenty of fallow deer in public land but trophy size is not great.

South island has great free range Tahr, Chamois, fallow & red deer. Lots pigs in the top end of the island. White tail deer in small parts and also in Stewart island further south. Also great wallaby & Canada goose shooting in the south. Again private stations have far better trophies and of course you get a lot of "farmed" trophy hunting as well.

Lots of goat shooting in both islands.

Dave the South Island is home to Tahr and chamois which the outfitters from the North don't have, the counter side of this is they do have Sika, Sambar and Rusa that the South does not.
Stags and Fallow are plentiful in both Islands.
Study the deals well, check references and ask the right questions and I'm sure you'll get the hunt you want.
As you well know you "pay peanuts you'll get monkeys" so cheap isn't always best.
Tell the outfitter/guide exactly what you want and get very clear answers.
Good luck.
