Fallow Carcass Question

A friend of mine has been offered a smaller chiller unit with internal measurements 75cm deep, 105cm wide and 200cm tall. From what I gather,it is a large chilled display cabinet that has been recovered from a refurb some where. The guy selling it wants �100 and I think its a bargain.

He intends putting a rail across the cabinet at about 190cm high to hang the carcasses from.

He is relatively new to stalking but has access to some roe and fallow. He is worried the cabinet will not be big enough for Fallow. Personally, I think he should get 2 does or prickets in there, but might struggle with regards the height, if he has to hang a mature buck.

Any of you folks who do a lot with fallow care to comment how heigh a rail he needs or on the over all size of the cabinet? He does not want to buy the thing and start chopping it about trying to make it bigger if he can help it.

I am trying g to convince him he needs to sell it to some one who stalks mostly roe and muntjac (can't think who!) but I think he suspects my motives!

Head and legs off, he will have no trouble with a mature fallow buck.

Pete ...though I do fancy that as a judge of character, he probably has you bang to rights!!

I have a unit similar to the one described - does nicely for up to 4/5 roe if necessary - Fallow as described - feet and head off - no worries.

I know it's the European forum but cms is going a bit far. My own chiller has the bar about eye level on this 6' person. Hung from a gambrel roe are just above the floor hung from the hocks with the head on. Fallow as Deerdogs says are best hung with head removed.

Does it have air circulation? That's a big help.

Thanks for that, I thought a rail at 6' to 6' 6" should be high enough for most Fallow.

Under the new European Regulations, chillers that are not measured in CM's will no longer be acceptable as they are not deemed to be compatable with carcasses that are weighed in Kg's and may in fact distort the temperature measurements in Centigrade!

With regards the air circulation, the honest answer is I don't know. He is calling around to see the item after work later this week, so will be in a better position to judge its suitability. My main worry is if it has electrical componets under the floor as this may make washing out a problem...

How are you hanging the carcase with the rear legs removed?

Lower legs removed.


This is the UK standard way of presentation for sale to a Game Dealer.

However, if I am butchering a deer for my own consumption I will often remove the legs and hook into the pelvis when removing meat cuts from the front half of the deer.
