Yes, you know that the chamois found in Spain is the Pyreneese (sp?) version?? This is classified as a different (sub-)species to those found in the Alps, on the Balkans, in Romania etc.

If memory serves, the French don't hunt the Pyreneese chamois on their side of the border - they even call it differently: "isard" as opposed to the regular "chamois". Not sure what the Spaniards do??

P.S. I just googled a bit, and it looks as if the "isard" is indeed hunted in France these days. I'm not sure that was the case when I did my French hunting exam??

If they are anything like their greek cousins, then garlic, olive oil seasoning and a pile of flaming charcoal will make an appearance in the equation!!

There are in fact two subspecies, the already mentioned one in the Pyrenees called "sarrio" and another one in the Cantabrian mountains of N. Spain called "rebeco". Also the CIC cathegorizes them differently.

As you can see on this picture taken in the "Picos de Europa", their colour tone is slightly different than their cousins from Central Europe.

hello Mete.
it seems i was wrong i believed that virgin was those when a virgin woman touched the olive for the first time!!and pressed it with her hand until the oil came out Big Grin
and extra virgin was olives taken by a virgin maid who diden't dare Wink to press it with her hands for extacting the oil and she used a machin to do that rotflmo.

Olio extra vergine d'oliva: degree of acidity must be less than 0.8%

Olio vergine d'oliva: degree of acidity must be less than 2%

The lower, the better.

Their service is good. They hunt both species of Chamois in Spain. Cantabrian and Pyrenian.
One word of advice, don't have your taxidermy done in Spain. The standard of taxidermy in Spain is lousey. Take your Cape and Horns home and have it done by your own taxidermist.

If the standard of taxidermy in Spain is what you see at their hunting exhibitions, Venatoria and Ficaar, then they have a long ways to go.
