The hunting season starts the 15th August for doves, pigeons and ducks.

There are some hunting areas in Algarve were you could book a dove and pigeon hunt.
I am not sure if any of these hunting areas is offering duck hunting.

You could also book a wild boar hunting (waiting on a "mirador" by full moon).

Let me know exactly what you want and when you will be in Algarve and I will see what I can do for you. I was born down there and I have good friends there (also hunters) that can be of assistance.
