After hunting deer and reindeer back home here in Norway, last year I went on a roe buck trophy hunt in Poland. As much as I enjoyed that experience, preparing meals of the fresh meat was not a part of it. My ideal hunting trip would include hunting of as large a variety of a countrys big game species as possible, and also a meat preparation and cooking class (or self prepared) based on local traditions fused with modern kitchen as well- like the "new Nordic cuisine". Foraging for local greens and mushrooms would also be very interesting. Does anyone know of, or have any experience with hunting trips similar to this? I assume looking for cull hunts would be a part of a solution to keep the cost down since trophies aren't the goal, but I haven't seen much advertising of this sort - especially in Europe. Can anyone help? | ||

All in one ? That I'll bet will be difficult. But it might be possible to find a cooking school that has a course about cooking game .There are a good number of cookbooks for cooking game. | |||

One of the Halls at the Dortmund Jagd & Hund Convention is starting to cater more to this aspect (which I also fine very interesting) of taking game fare from the field to the gourmet kitchen. There's of course all the chillers, coolers and field dressing specialists, with their respective equipment, meat dryers, shrink wrapping, etc. Game specialities are also offered with some name gourmet chefs to show preparation and wine tasting etc. However; and this is where I'd take my idea to, is Weber, they not only depict "how to grill" game meats, but also sold meat and the prepared fares themselves. With their marketing clout I could imagine a call to Weber Scandinavia could get some keen interest ginned up in no time at all - that is if they are not already doing so themselves. Have you tried this, I've seen that you'd like diana :-). female hunting in Poland is more for pleasure than for cooking. @BackcountryHunterNorway: If you ask for private accommodation in Poland, so it is possible to participate to cook local game, I have experienced the same in Romania, Azerbaijan and Croatia we got the chef at our little hotel to cook one of our chamois. My recommendation is to ask other hunters where they've been and what opportunities there are | |||

You could try contacting Fallow Buck for UK hunts. What he can do with a Bottle of Mrs Balls Chutney and a piece of his Hot Smoked Venison is a revelation well worth experiencing. Hey guys, Thanks for the kind words. I've just been in Cyprus doing something similar with fish. Coconut shrimp and Mahi Mahi, and Mahi Mahi steaks with mango salsa and sea bass sashimi saw us out on the last night!! We are working with some chefs in London about something similar to what the guys are suggesting to show chefs the source of their meat, but we could do it the other way around for hunters. We have access to a large country house with a big kitchen and a full deer larder for butchery. If we could get enough people together (to keep the cost down) it would be a fun week of hunting fishing, cooking and smoking meat and fish. K | |||
