jeffeossoyet more texas fruit wines
i had ordered 32oz of
www.fruitfast concentrate of
sour cherry
concord grape
pomegranit
each 16oz is about 12-12.5 pounds of fruit .. and, seriously, 7 points of gravity per pound
and split (16z) into 3 different batches, other than that, the same follows
16oz conc.
2.5 tablespoons acid blend
10# imperial sugar
water to 6.5 gallons
in a week or 10 days, i'll do the following
1 level tbls tanninpot.sorb to stop the yeast
then another week
16 additional oz conc.
fructose to taste and a squirt of key lime juice
i don't like camden tablets

jeffeossochecked SG --- between 1.002 and 1.00
removed raisins (which became "small" white grapes)
added
2 tbls polyclar
1 camden tablet
1/2 tbls tannin
the pom is a rose' .. probably not going to change
the concorde is just a red wine -- really
the sour cherry IS interesting
I'll let these sit, and rack over to a clean container .. I'll then add the other half of the juices, p-sorb if i need it, and then, after a couple days, rack and sweeten.. then let sit
