I think Bob Dozier makes some of the finest knives out there:

You can spend a lot more money on a custom knife but I don't know if you'll get much better. But there are lot's of really nice knives out there.
If you want to try something a little different you might check out Helle knives:

Some of the blade shapes are quite interesting and the knives are pretty inexpensive especially if you consider the quality of the steel they use...............DJ
