Try knifekits.com, or texasknife.com. Both these companies offer some pretty nice kits, both fixed and folding. They include the blade, guard, pins, handle material and I think some of them have a sheath. I built some of their kits in the past and they turn out real nice. Very nice idea.....

Jantz and Sheffield also have quite a few kits in a lot of different styles.

If you want to make a really good one get a blade blank from Gene Martin-Provision Forge. You'll have to do the sheath separately but the blades are top shelf. If you want a complete kit the kitknives or texas knifemakers have everything pretty reasonably.

Bob Engnath (known as Bob Grind) made blades for folks to finish. He is thought to have made nearly 100,000 blades. He was a superb grinder. He had a catalog that covered about every phase of finishing a knife. The topics from that catalog have been put up on his memorial site and can be found at: http://www.engnath.com/public/manframe.htm Is very much worth reading.
