First, I assume you are asking about the 500 nitro express 3 inch, not the 500 x 3.25" or the 500 black powder express. The answer below is about the 500 nitro express 3 inch.

1. DIES.

RCBS are an option. They are good but expensive. Huntingtons (www.huntingtons.com) can probably get them made the fastest for you.

But CH4D dies will cost about half as much and are usually available on the shelf. Check www.ch4d.com.

2. BRASS.

Do not buy Bertram brass. The rims are of varying thickness and some rounds will not close in the gun.

MAST/BELL brass is good. You can get it at http://www.buffaloarms.com or maybe at Huntingtons.

3. SHELLHOLDER

See RCBS or CH4D. Both should be readily available.

4. DATA

I do not know of reloading data on the net, but here is the load that my rifle was built for:

110 grains of IMR 4831, Federal 215 primer, Woodleigh 570 grain bullet.

A-Square says you can use 109 to 115 grains of H4831, or 100 to 105 grains of IMR4350 or 109 to 113 grains of Reloader 19 behind a 570 grain bullet.

NO FILLER IS NEEDED.

The federal 215 primers are supposed to be the hottest and therefore best for big powder charges.

You can also use 35-50 grains of XMR5744 powder behind a 500 to 600 grain lead bullet for practice loads.

Barnes latest reloading manual lists data for the 500 NE 3", also.

I have also used a load similar to those listed. I use 113 gn. of 4831 but have had good luck with the CCI-250 primer as well. Also using a 570 gn. bullet. I am using this in a TC Encore so regulation is not an issue.
