I also have a 25" 500 Jeffrey. I haven't worked up to max loads, but I'd expect 535's can be launched at 2500+ fps, and 600's @ 2400 fps.
I've never tried the Bertram brass in the 500, but have used Star and Hornbear, and they are both excellent.

I've got a 500 Jeffery as well, though with a 23" barrel. I can't imagine anything that would require top velocities from this cartridge. Running the round at 2200-2300 fps is more than enough, anything else is burning powder for the sake of recoil, in my opinion.
I'm not sure what your rifle weighs, but mine at just over 10 lbs, the few times I've tried running at/over 2400 fps, was not a pleasant experience. Anytime you approach or push 100 ft-lbs of recoil (or more), is easy to punchy after a few rounds.
