Dont they make a .582" bolt face stainless action like for the 30-378 or 338-378? I know I have seen them around.

My 2004 Weatherby catalog has both the Fibermark Stainless and Stainless Synthetic being offered in .30-378. So there should be a few out there. That was the last cataloged year for stainless Mk V's though.

The .30-.378 is built on the .378 action, so building a .378 (or .338-.378, .416Wby, .460Wby (or for that matter, a .416 Rigby or .450 Rigby) is possible.
