Many years ago, when I was in High school, I remember buying a paperback with the aforementioned title. Gilligan was the P.H. and he was engaged by a rich American to go after a monster Elephant. They were both ate up with macho about who could walk further, drink more etc, etc. Throw in an arrogant/dangerous Somali tracker with ulterior motives on a clandestine hunt across borders. As I recall, it was a hell of a read, but that was thirty years ago. I think I will try on Amazon to find it. Update, went on Amazon and ordered it in hardback (used) for $12. They had paperbacks(used) for as little as $3

I am going to have to read this book...but for what it is worth, this sounds like the plot in the Stewart Granger movie titled THE LAST SAFARI. You can still get a copy on amazon and even though there are some real problems with the movie, it is worth watching.
