Educate me on Chokes

I bought a Maverick 88 pump 12ga the other day ($160 brand new), and it came with 1 choke tube, modified. This is my first shotgun (besides an old Stevens .410), and I was wondering what chokes I would need for different situations/ loads.
I would most likely be using it for deer, turkey, rabbit. There aren't many game birds here in upstate, NY (around Albany). Skeet/trap is also a possibility.
The only ammo I have right now is the cheap Win 2 3/4 #8 low brass.

They recommend improved cylinder for slugs, but they also make a rifled choke that would be more accurate. For turkey you would do better with an extra full choke. Most turkey guns you'll want to shoot the tightest groups possible. For rabbits I'd prefer improved cylinder.

Bob257 is right on. No arguments here, but I will expand on his points a bit.

An open choke like improved cylinder is pretty versatile for small game (rabbits), birds and skeet. It will even pass for jump shooting ducks at close to moderate range. You will be served well in these situations with improved cylinder.

Your modified will serve you well for longer ranges and heavier birds like ducks and pheasants.
With modern steel loads, it may be the best waterfowl choice for you. Generally with steel shot you use one choke more open than with lead, in my experience. (Where full used to be the norm, modified will serve with steel)The modified will be ok for informal trap sessions as well as most sporting clays stations.

A full choke will be good for pass shooting waterfowl at long range, ok for turkeys as well The important thing is to pattern your gun to see what the spread looks like and what your effective range is with various loads.
Full is also good for trap.

The extra full, like Bob257 stated is best reserved specifically for turkeys.

In summary, for the purposes you state, I would round out your selection with a full choke tube and an improved cylinder, and you will have the bases pretty much covered for what you are doing.

For turkey extra full ( turkey choke ) is the best and sights ,I have a clip on rear, are better. For deer - rifled choke for slugs, sights needed here too, or buckshot only within 25 yds (stick to slugs). In any case because of the variables you MUST pattern all loads and chokes.
