New Years Eve Pork
I decided to dust off my 50 cal Hawken that I built from a kit in 1983 and go hog hunting this morning. I had been in the woods for about an hour when this guy came in to some oak trees to feed. He will be the guest of honor at a New Years Eve celbrations tonight.

Bill,

I got him field dressed and the prostate gland removed moments after the photo was taken. He was skinned and buthchered into cokking sized pieces, and parboiled in a large pressure cooker. After the pressure cooker he was placed on a smoker and cooked slowly until the New Years Ever festivities started. He was superb!!! There wasn't much of him left.

Glad it was good. He's got some nice cutter's.

We used to throw the boars away for the coyotes and keep the sals. I never could get past the stinch of the boars.

I have shot very stinky boars, I mean VERY stinky. Once I got the skin off the meat was perfect. Even boars as big as 300 to 325 lbs [weighed] tasted great.

If you will remove the prostate gland and the some surrounding tissue while the boar is still warm, the "stink" will go with it. The only exception to this is a boar that has been chased by dogs, fighting with another boar, or has been upset in some way. IMHO
