What I have learned on AR, since 2001: 1. The proper answer to: Where is the best place in town to get a steak dinner? is…You should go to Mel's Diner and get the fried chicken. 2. Big game animals can tell the difference between .015 of an inch in diameter, 15 grains of bullet weight, and 150 fps. 3. There is a difference in the performance of two identical projectiles launched at the same velocity if they came from different cartridges. 4. While a double rifle is the perfect DGR, every 375HH bolt gun needs to be modified to carry at least 5 down. 5. While a floor plate and detachable box magazine both use a mechanical latch, only the floor plate latch is reliable. Disregard the fact that every modern military rifle uses a detachable box magazine. 6. The Remington 700 is unreliable regardless of the fact it is the basis of the USMC M40 sniper rifle for 40+ years with no changes to the receiver or extractor and is the choice of more military and law enforcement sniper units than any other rifle. 7. PF actions are not suitable for a DGR and it is irrelevant that the M1, M14, M16, & AK47 which were designed for hunting men that can shoot back are all PF actions. 8. 95 deg F in Africa is different than 95 deg F in TX or CA and that is why you must worry about ammunition temperature in Africa (even though most safaris take place in winter) but not in TX or in CA. 9. The size of a ding in a gun's finish doesn't matter, what matters is whether it’s a safe ding or not. 10. 1 in a row is a trend, 2 in a row is statistically significant, and 3 in a row is an irrefutable fact. 11. Never buy a WSM or RCM cartridge for a safari rifle or your go to rifle in the USA because if they lose your ammo you can't find replacement ammo but don't worry 280 Rem, 338-06, 35 Whelen, and all Weatherby cartridges abound in Africa and back country stores. 12. A well hit animal can run 75 yds. in the open and suddenly drop with no initial blood trail, but the one I shot from 200 yds. away that ran 10 yds. and disappeared into a thicket and was not found was lost because the bullet penciled thru. I am 100% certain of this even though I have no physical evidence. 13. A 300 Win Mag is a 500 yard elk cartridge but a 308 Win is not a 300 yard elk cartridge even though the same bullet is travelling at the same velocity at those respective distances. | ||

Mike Great looking roast! My family also prefers elk over other big game meat. We do like pronghorn though, partly because the mild flavor makes great chili. As you surely know, Texas elk season is open year round since they are considered exotics here. I tried for one this May, but the heavy cover defeated our best efforts: We calld "calf rope!" after 4 hours in this mexquite jungle. So I had to settle for a red deer cow: Better luck in more open country and red deer eats well too. Although I like really good cuts of beef medium rare, I opt on the side of caution with wild game and go with medium. You do sacrifice a little tenderness and flavor, but wild game seldom gets put in a chilling room 5 minutes after it is skinned and 15 minutes after it is killed. I worked in a packing house as a teenager and know the importance of keeping meat clean and chilled quickly and properly. BH63 Hunting buff is better than sex! | |||

My understanding is that if it is frozed 60 or maybe 90 days all bacteria that may have been present is dead. All mine will be rare to med-rare unless comercially processed which I have none of. I really dont eat much comercially processed meat. God Bless, Louis | |||

Everybody obviously can have their meat cooked however they want. I don't think I have ever read a recommendation of "medium well" in a wild game cookbook. Feezing does not necessarily kill food borne bacteria. Only cooking to an adequate temperature will kill off most food borne bacteria. Traditionally, many game meats, especially wildfowl, was held at room temperature until “high” (i.e. starting to spoil). Many cookbooks still reflect this attitude. And almost all meat will get tougher and lose flavor the longer it cooks. People in some countries still eat raw meat and fish. But there is a risk. BH63 Hunting buff is better than sex! | |||

Mike, The She-Wolf and I eat a lot of cow elk around here...as far as we're concerned those old gals eat about as well as anything we've ever put in our faces! Interestingly, our nephew gave us a copy of "Buck, Buck, Moose" and we REALLY enjoyed fixing Elk Diane...we recommend it highly! And feel free to place us in Saeed's "beast" category: that roast is done just about right. From shot to freezer to table, NOBODY touches our elk but us...I worry about a lot of things, but our game meat isn't one of them! It's cooked about right for me too. I had fresh pronghorn steaks last night and dove breast sandwiches for lunch just now. I love this time of year and will miss the wonderful meals by mid-summer when the meat runs out, like it does each year. The 479 lbs of burger we just ground will last me and my 4 married kids a couple years...until we grind again. It's quite a wild game meat production every couple years. Zeke | |||

I'm like you Mike! I like my steaks rare, and burgers medium rare to medium. The only thing that gets cooked to well done are things like front shoulder roasts, but those take several hours low and slow on the smoker to break down the tough stuff! | |||

35 years of eating almost nothing but game meat, rare or at worst medium rare. No issues. The idea of well done is a nightmare to me. Now bear meat is a very different story. #1 have it tested, if it's contaminated, trash it, sorry if that offends you but I have no desire to harbor a parasite for any length of time. #2 It is fat enough that cooking it medium will not make it into boot leather. As for cow elk, well I've always been an "if its brown it's down" hunter and I've been fortunate to kill a couple of cow elk a year often enough. They were almost always great eating, but like anything, get enough of them and you will get an cow that is not tender in every cut and marginal even in the back straps, tragedies do occur. Elk cooked "well done", Philistines... Get thee behind me! | |||

that roast is cooked well enough to eat, Hamburger is the culprit and it should be well done..All I eat is deer and elk in the USA, and very little beef as my heart doctor demands it, I can eat wild game. I cheat a bit, but not often..My favorite is elk and those little Texas whitetail from the hill country, now that's some kind of mild super meat..I go get some a freezer full every year..two bucks and three does and some cull meat..The culling is no fun, its just hard work, gut'en and skinning and quartering almost 200 does gets old in a hurry but goes to charity and feeds a lot of folks in a state with 7 million deer last count I got..Killing the screw worm fly set the woods on fire with deer..
