With all the crap going on in the world and the States right now it is amazing what a successful hunting season with a freezer full of elk meat will do to make things just a little less stressful and add a little comfort looking at the next year coming up!

I am the same. Two elk in my freezers makes me happy. No $6-8 dollar a pound hamburger. Last time I went it as $7.99/pound.

I have to say, after avoiding beef for now several years due to excessive pricing I find it doesn't have any flavor at all now. Wild game is much better. Plus, I raise sheep for the table.

Indeed! This year I get to play along. All three of my kids drew elk tags this fall, and all three filled them. We are well stocked, and even have plenty to share with family.

What turned me off of beef is the ample and excessive use of antibiotic on live beef

Years ago my wife got sick off beef. Not sure what chemicals it had in it but it made her sick. Ever since then most beef will make her sick. We have a place that we can buy organic beef right off the ranch and that is ok but any commercial beef does not work so for the most part all our red meat is wild game. Most years we get an elk so we are good for meat. This year we got two so we can share some of the excess with friends and family. It's always nice to be able to do that.

have always got deer and elk in my freezer, but I have beef, lamb and Spanish goat also, meat is meat IMO, we have the best meat in the world at our markets and this so called chemical crap is just that an over reaction for the most part on folks who drank the koolaide..check out whatcha get when you dine outside the good old USA!!

Ray, not maybe chemicals but every calf at least in cold climate gets pumped with antibiotics because ranchers calve too early so they can run calves out early in the spring for whatever marketing in fall
I get the market but it forces …again…ranchers to use vaccines and antibiotics to save calves/survive each year
Right or wrong we all know antibiotics residue is not good in long run and that is my point in all this so it comes down to again IMO to calve in natural cycle/which is late may/early June

I agree that the USA has some of the best in the world but it still has the issue of residual stuff in the final product.

I grew up on a cattle ranch and doctoring cattle was a pretty normal thing. Like M says giving antibiotics was also a pretty normal thing and most ranchers do it. Most cattle also go through feed lots after the rancher sells it and it is also not that unusual for feed lots to put weight enhancers (steroids) in the grain to increase the marbling and fat of the beef. All these things tend to have a residual in the meat. For most people it is not an issue but for some who are overly sensitive then it is.

It does not bother me at all but my wife it does so we tend to say away from beef and usually eat elk.

Wifey and I have two deer in the freezer so far. Might bring home another during Christmas week. We have a small ranch in East Texas.


Keep yer powder dry and yer knife sharp.

I feel much better after finishing the last 3 of 5 deer I put in the freezer this year. Probably around 150lbs of ground venison mixed w/ 15% beef tallow…excellent stuff. Beef fat bought from local small town butcher shop at 25 cents/lb.

We use ten percent beef tallow in our ground venison!
