Success on some New Mexico Goats!

Took my wife to New Mexico to hunt pronghorn. She got hers Monday afternoon, I got mine Tuesday morning. She wants to come back and elk hunt now - mission accomplished!

We saw her goat late morning, but could never get close enough We came back to the general area in late afternoon and found him grazing. She shot him walking away at 220 yards in the neck - went down instantly. She even had her scope on 4X (that's right, don't need those 5-25x56mm scopes). I got mine late morning after watching a number of goats. Happened onto mine, along with 10 ewes, hiding from the wind in a steep draw. Took him at 302 yards. Dropped on the spot. We field scored her's at ~80", mine at 81.5".

Picking up the meat tomorrow in Ruidoso on the way home. Doing dual pedestal mounts.

Take a bag of ice with you and stuff it in the body cavity after you gut it. I've found a few recipes that sell ok at our house, a marinade for grilling and a stroganoff recipe sell decently well.

Probably not cooking. Recipes and cooking methods used for deer or elk will work just fine with pronghorn. However, in my experience, pronghorn are very susceptible to spoilage. Couple that with the fact that they are often hunted when it's still quite warm and you have plenty of opportunity for poor meat quality. The wife and I have killed more than 30 antelope in NM and WY and have yet to eat one that didn't taste great. Of course, I'm anal about very quickly skinning and cooling the meat. Get the hide off, get the meat cool (preferably iced), and you'll have great meat.

Very nice goats! Some great venison there also. To me the taste is right up there with moose and Dall sheep. As has been said dress them quickly and let cool. Cook medium rare. Yummy!

One of the complaints I have heard concerning the quality of Pronghorns deals with their steady diet of sage. Lora and I find them excellent, but everyone has different tastes.

My wife used a 308 Win w/150 gr SST from her Tikka T3. I used a 7mm Mag with a 140 gr Accubond in a custom FN Mauser (you can see it on the Custom Rifles forum here in AR).

We hunted with Kerry Sebring at High Lonesome Outfitters on a 85K private ranch outside of Nogal, NM. We booked my wife an elk hunt for next Oct 1-5 before we left this morning.

Her goat was 16" on each side; mine was 13.5" on the side that broke off and 16.5" on the other side.

Had steaks, chili, and charizo made up. Brought it home today.

OH MY GOODNESS -

My wife just made this from the antelope - it was soooooooooooo goooooood

Chorizo Sweet Potato Kale Hash

• 8 oz raw chorizo sausage (antelope - it was a grind with spices and 10% beef fat from the taxidermist)
• 2 cups sweet potato, chopped (about 1/2 inch dice)
• 1 Tbl olive oil
• 1/2 cup chopped onion
• 2 cups chopped kale
• 1 tsp garlic powder
• 1 tsp cumin
• salt and pepper to taste
• 1 Tbl lime juice
1. Cook bulk chorizo in a large saute pan (I prefer enameled cast iron dutch oven) for about 4 minutes. Remove and set aside. Add sweet potatoes, garlic powder, cumin and olive oil to the pan and cook for 5 minutes. Add the onions and cooked chorizo back to the pan, and cook for another 5 minutes. Add the kale and cook until wilted – about 2 minutes. Remove from heat, add lime juice, and season with salt and pepper to taste before serving.
2. Serving suggestions
A. Eat as is
B. Scramble some eggs and make breakfast tacos
C. Fry up an egg, slap it on top and classic hash
D. Serve it on top of some mashed potatoes

I got 50 lbs of meat off mine. They said it was a shop record. Would have gotten more, but hit it high and it ruined some shoulder/back meat.

I like the Nogal/Capitan area. I got my bear last year in the shadow of Church and Nogal Mtns.

OP congrats on the double Antelope. Both are trophies in more than one way.

I have been trying to get my wife to take hunter's safety so she can join me but she keeps dragging her feet.

When looking for recipes for Antelope I stumbled across this website. So far I have made two recipes. The wife was extremely skeptical about trying it.
She and my son have both asked me to make the Flautas again.
I made enough (I thought) for each of us to have plenty and then left overs. Well there were no leftovers.
