Cook the quarters, ribs, and loins whole in the ground rubbed heavily with equal mixture of brown sugar a black pepper. Buy a keg. Start drinking beer a 3pm while taking it off. Serve a 5. Everyone will think it best ever eaten…even though it was marginal.

Makes perfect sense.

A buddy of mine killed a 30 incher here in NM a couple years ago and had the whole thing made into chorizo. He was very pleased.

On that same hunt, my daughter killed a relatively young ram. He was very edible, though I thought it was kind of bland as far as wild game goes. Not tough at all though.
