Mature Blackbuck bucks are usually between 80 and 105 lbs. Their hams, tenders and backstap are prime. Their meat is very dark, like axis or sika.
It makes excellent jerky, chicken fried steaks,or butterfly steaks. It can be more gamey tasting than whitetail. It also works well in mixing with pork to make link/pan/summer sausage.
The does, though smaller are also excellent table fare.

My wife and I have tried some of the backstrap from the one I shot last November. It was very tender and excellent!

OK, as stated above, it is a dark red meat. I personally like it. I do know a lot of folks that don't like it. It has a stronger taste that some venison and is much stronger than Axis. Lke GWB said, the free-range males will average 80-85 lbs. here in the Edwards Plateau. I am guiding another free-range blackbuck hunt tomorrow.
