I had an antelope mounted at Frontier Taxidermy in 1986 that still looks new. Very Pleased with them.

There are a couple of meat-cutters in Green River, one more in Rock Springs. Those would be the places I'd start looking. Since the gas drilling started, nobody cuts meat between Rock Springs and Jackson Hole any more. There is a rifle shop in Green River I'd like to visit, haven't been there during working hours yet.

There is a fantastic taxidermist in Coalville, UT (Between Evanston and SLC) - High Uintahs Taxidermy. Dean Schulte is the owner and you should give him a call or stop in. He is right on Main Street in "downtown" Coalville.
