Is the 10" twist rate fast enough in a 8x57 for the 250gr bullets?

What about 220 gr 8mm bullets?

I know for certain the 220's will stabilize with that twist

The Woodleigh 250 is a tad longer than the 220's but will still stabilize in a 10" twist.

Yes - My 8mm Mauser would shoot the 220 SGK with no signs of key holing
