Here is a 212.2 pound state record Lake Sturgeon speared today on Lake Winnebago today. The DNR says that it is over 100 years old!

We don't have any sturgeon around here...are they generally edible? Do they have edible 'caviar' at this time of year?

I'd be wondering about the amount of mercury and other toxins that a 100 year old bottom feeder might have accumulated.

I enjoy them smoked, some folks like them fried or even baked.
As for the caviar, yup, as they are spring spawners the females will be carrying.
