I'd sure like to make one and put some faces to these handles. Probably have a buddy who'd come along as well. Anybody want to do another? My .41 is a hog virgin and March would be perfect.

I would think we could do another, but I personally would like to do something a little closer to home as it was a real long haul for some of us. I may have just the spot......

If there is enough interest generated here, we could possible do another.

I don't mean to be inviting myself along, but the last thread seemed to be an open call. North Carolina would be a fur piece for me, but I'm not saying it couldn't be done. Are future hunters allowed to tag along, or is this a men only, dirty jokes and poker till 3 am kinda thing?

griz, with the outfit I am thinking about, I don't really know the limits. The bunkhouse is huge and can accomodate a whole bunch of guys. I will find out some more infor and post it here.

It is basically ground pork and rice with seasonings in a sausage style tube. You steam or boil it to cook it, and it's great stuff with a few crackers and a couple of beers. This is a local delicacy, and I live a mile south of a small country store, which is nationally famous for it's boudin. They literally sell a ton/day. The old people used to boil it in blood to add flavor and not waste. I still know of one store that makes a limited amount this way, but I've never had it.

If this trip comes to fruition, I promise ya'll some good food. I was going to make a big gumbo and freeze it. Bring along a rice cooker, and we have rice for the gumbo, and use the rice cooker to steam the boudin. I think griz78 was thinking about bringing a turducken, which is a stuffed, boneless duck inside of a chicken inside of a turkey. Slice it like a roast and get a bit of each.

I'd sure as hell hope that on Sat. night, we'd be eating a fresh pork tenderloin.

I live close to what was Comeaux's, if you mean the one that was in Lafayette, on Congress, down from the hospital. They closed about three years ago or so.

Champagne's now has three locations, one of them within 1/2 mile of my parents. They have some damn good sausage. The jalapeno/chicken sausage will start a fight.

I live not far at all from "The Best Stop" and "Don's Cajun Meats", both of which have some pretty damn good boudin, cracklin's, tasso, stuffed pork chops, and such.

I don't know about around Duson. I actually live just a few miles down from Duson, and have seen a hog removal poster in the Agro window, but haven't ever heard of a wild hog anywhere around. Not to say that there aren't, I've just never heard of any.

I know of a guy around Eunice who offers canned 'hunts', but they are really sale barn hogs, trained to the feeder. I think I've heard mention of a place around Jennings, but if you don't mind driving a couple of hours or more, western La, and up into the piney woods around Columbia have all you want. East Texas also has a bunch of places to go. Some charge for the hunt, and then charge you additionally by the lb. for your kill, so ask before you go. Good luck.
