Years ago, all of the guys in my old hometown neighborhood would grab our shotguns and hightail it to the local mullet infested bayous for an afternoon of mullet trap.
We would shoot the mullets as they jumped from the water. Sounds easy huh!
Most of the time they would make 2 to 3 jumps and you had to try and time it so you could get off a shot as soon as they came out of the water.
To make it interesting, we would put a wager(mullet money) on 3 mullet groups. Not 3 shot groups. If one jumped inside the zone and you didn't get a shot off it counted as a missed mullet. Ties were settled with a shoot off, one mullet shots until one was missed.
It was a blast.

Have often thought of trying that myself, but, unfortunately, it is illegal where i live(d).

I don't know what a Texas mullet is like, but down here that would be a waste of some good eatin' fish! Now, gator-gars and turtles are a different matter, as they really infest a lot of lakes and rivers. [Wink]
